Many refugee farmers experience success growing and selling colorful ethnic vegetables from around the world through direct marketing and sales to local restaurants. Although the demand for this produce is evident, lack of information on ethnic crop production in Utah prohibits other local producers from taking advantage of this opportunity to diversify their crops in order to access new markets. Through this project New Roots farmers and staff piloted profitable ethnic vegetables, identified seed sources, collaborated with USU Extension on production and sustainability research, and established best practices on post-harvest and handling. New Roots also networked with local buyers to increase demand and expand marketing opportunities for specialty ethnic crop producers. Tomatillo illustration by Laurel Hunter. ( IG: @sishunter)
